For the detection of shellfish protein in food
INTENDED USE
The BIOKITS Shellfish Assay kit is intended for use in the detection and quantification of Shellfish (primarily crustaceans) at very low concentrations in uncooked and cooked foods.
The risk of allergy caused by undeclared Shellfish in food means there is a need to identify Shellfish within foods and environmental swabs in order to provide accurate allergen labelling information on food products.
THE ASSAY
The assay utilises polyclonal antibodies to Crustacean Tropomyosin in a non-competitive, sandwich type ELISA. The ready to use standards provide accurate quantification in parts per million (ppm). Food samples are extracted using a tris / high salt buffer, diluted, then tested in the assay.
SUITABILITY
Suitable for testing for Crab, Lobster, Brown Shrimp, Tiger Prawn, Langoustine and Crayfish. Other Crustaceans not listed here may also be detected by the assay. The assay also has a low cross reactivity to some Molluscs including Oyster, Mussel and Squid.
